Too much water in a flipping cube tray design

I have an Admiral refrigerator model hmg249227a S/N 29j39813011 purchased on 11/92. The ice maker is allowing too much water into the cube tray, hence it's overflowing into to the cube storage bin and freezing the existing cubes and locking up the system. I need to know what tells the system to shut off the flow and is it adjustable?

On an Admiral design ice maker I find this problem happens not because of too much water, but because one or more of the ice cubes is left in the tray after the dump cycle. (it always happens when you're not looking).

Over 95% of the time the resolve is to get a new tray ($16 or so) and replace the original. Seems the nylon wears and ice sticks to it when the tray is old. If even one cube gets left behind the clumping problem compounds.
