Freezer coils red hot and dripping!

Kenmore side-by-side, model 363-9554710, purchased 5 years ago. Heard "hissing" noise from freezer. Removed inside panel and noticed water dripping on coils. Coils were "red" hot.
Immediately unplug appliance. When removing items, found small (10") plastic tube, looks like it broke off from somewhere. Can't see where it belongs. Freezer and refrigerator still seemed to be cooling, though.

You just observed the defrost cycle. This is normal. The plastic tube is for the ice maker fill. It probably came out of place when you removed the back wall.
