Hi, it could be a vast number of different things. The length of time for it to cool food items is not usually a concern though, if the cabinet itself does in fact get to the proper temperature. If your controls are set in right position, (you may have to tinker a bit) a thermometer placed in the center of the refrigerator section should read just a few degrees above freezing. If you can't achieve this, you may have a technical problem. In this case send me more details and I'll try and help.

I'm quite sure I do have a technical problem. For the last month or so, the fridge just hasn't achieved a 'cold enough' temperature - even with the coldest setting selected. Is there a thermostat that senses the temperature, and then runs the compressor accordingly? I suspect this is the problem. Any thoughts?

Sure, yes there is a thermostat that turns the compressor on and off to achieve the right temperature, on a refrigerator it’s called a cold control. It’s placed under the dial with which you turn the unit up, down, or off.

Except in rare cases for causing intermittent starting and stopping, these controls almost never fail in the way that cause your fridge not to be cold enough. Usually they become insensitive and your foods freeze. So, you likely have a different problem which on typical frost free refrigerators usually means a problem with the automatic defrost circuit.
